This Sausage Pancake Breakfast Casserole is the perfect blend of sweet and savory, combining fluffy pancakes, savory sausage, and a drizzle of maple syrup. It’s an easy, make-ahead recipe that’s great for holiday brunches, busy mornings, or breakfast-for-dinner nights.
Ingredients
2 cups pancake mix
1 lb breakfast sausage, cooked and crumbled
1 cup milk
2 large eggs
2 tbsp butter, melted
1/4 cup maple syrup (plus more for serving)
1 cup shredded cheddar cheese (optional)
Salt & pepper, to taste
Instructions
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
In a skillet, cook sausage until browned. Drain excess grease and set aside.
In a large bowl, whisk together pancake mix, milk, eggs, melted butter, syrup, salt, and pepper.
Pour half of the batter into the baking dish. Layer cooked sausage evenly on top.
Add the remaining batter and sprinkle cheese over the top (if using).
Bake for 40–45 minutes, until set and golden brown.
Let cool for 5–10 minutes before slicing. Serve warm with extra syrup if desired.
