2 cups pancake mix

1 lb breakfast sausage, cooked and crumbled

1 cup milk

2 large eggs

2 tbsp butter, melted

1/4 cup maple syrup (plus more for serving)

1 cup shredded cheddar cheese (optional)

Salt & pepper, to taste


Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  • In a skillet, cook sausage until browned. Drain excess grease and set aside.

  • In a large bowl, whisk together pancake mix, milk, eggs, melted butter, syrup, salt, and pepper.

  • Pour half of the batter into the baking dish. Layer cooked sausage evenly on top.

  • Add the remaining batter and sprinkle cheese over the top (if using).

  • Bake for 40–45 minutes, until set and golden brown.

  • Let cool for 5–10 minutes before slicing. Serve warm with extra syrup if desired.
