These crispy mashed potato french fries are the ultimate comfort food mash-up — creamy mashed potato centers wrapped in perfectly golden, crunchy exteriors. They’re fun to make, family-friendly, and absolutely irresistible with your favorite dipping sauces.
Ingredients
3 large Russet potatoes, peeled and cut into chunks
1 teaspoon salt, plus more to taste
½ teaspoon black pepper
½ teaspoon garlic powder
½ cup shredded cheddar cheese
¼ cup cornstarch
3 cups vegetable or canola oil, for frying
Optional: fresh parsley or chives, for garnish
Instructions
Boil the potatoes: Place peeled, chopped russet potatoes into a pot of salted water. Boil until fork-tender, about 12–15 minutes. Drain and let steam dry for a minute.
Mash and season: Mash until smooth, then stir in salt, pepper, garlic powder, cheddar cheese, and cornstarch. Mix until thick and dough-like.
Shape the slab: Spread mixture evenly in a parchment-lined 8×10-inch pan (¾–1 inch thick). Smooth the top.
Freeze: Chill for 30 minutes, or until firm enough to cut.
Cut and fry: Slice into fry-shaped sticks. Heat oil to 325°F and fry in small batches for 5–7 minutes until golden and crisp. Drain on paper towels.
Serve: Sprinkle with salt, garnish with herbs, and serve hot with your favorite dipping sauces.
Notes
For extra crispiness, chill cut fries for 10 minutes before frying.
To make ahead: Freeze shaped fries for up to 24 hours.
To reheat: Bake or air fry at 375°F for 5–6 minutes.
