Ingredients

1 (16–18 oz) package shelf-stable or refrigerated gnocchi

23 tablespoons olive oil

23 garlic cloves, minced

5 oz fresh baby spinach

4 oz feta cheese, crumbled

1 lemon (zest + juice)

Salt and black pepper, to taste

Optional add-ins:

Fresh herbs (dill, parsley, mint)

Cherry tomatoes

Red pepper flakes


Instructions

  • Heat olive oil in a large nonstick or cast-iron skillet over medium-high heat until shimmering.

  • Add gnocchi in a single layer and cook undisturbed for 2–3 minutes. Stir occasionally and continue cooking until golden and crispy (about 7–8 minutes total).

  • Push gnocchi to the side, add garlic, and sauté until fragrant (30 seconds). Stir into gnocchi.

  • Add spinach and cook until wilted (2–3 minutes).

  • Remove from heat. Stir in crumbled feta, lemon zest, and a squeeze of lemon juice.

  • Season with salt and black pepper. Serve warm with extra feta or fresh herbs on top.

Notes

For a protein boost, add grilled chicken, shrimp, or Italian sausage.

Swap feta for goat cheese or Parmesan if you prefer.
