Ingredients
1 (16–18 oz) package shelf-stable or refrigerated gnocchi
2–3 tablespoons olive oil
2–3 garlic cloves, minced
5 oz fresh baby spinach
4 oz feta cheese, crumbled
1 lemon (zest + juice)
Salt and black pepper, to taste
Optional add-ins:
Fresh herbs (dill, parsley, mint)
Cherry tomatoes
Red pepper flakes
Instructions
Heat olive oil in a large nonstick or cast-iron skillet over medium-high heat until shimmering.
Add gnocchi in a single layer and cook undisturbed for 2–3 minutes. Stir occasionally and continue cooking until golden and crispy (about 7–8 minutes total).
Push gnocchi to the side, add garlic, and sauté until fragrant (30 seconds). Stir into gnocchi.
Add spinach and cook until wilted (2–3 minutes).
Remove from heat. Stir in crumbled feta, lemon zest, and a squeeze of lemon juice.
Season with salt and black pepper. Serve warm with extra feta or fresh herbs on top.
Notes
For a protein boost, add grilled chicken, shrimp, or Italian sausage.
Swap feta for goat cheese or Parmesan if you prefer.
