Ingredients
2 tablespoons butter — adds richness and flavor
1 medium yellow onion, finely chopped
2 large carrots, peeled and diced
2 cups potatoes, diced small (Yukon Gold or Russet)
2 cups cooked chicken, shredded or cubed (rotisserie works great)
4 cups chicken broth (low-sodium preferred)
8 oz cream cheese, softened (full-fat for best texture)
1 cup milk (whole or 2%)
2 tablespoons all-purpose flour
2 cloves garlic, minced
½ teaspoon dried thyme
Salt and black pepper, to taste
Optional Add-Ins:
½ cup corn or peas
2–3 slices crisp bacon, crumbled
Instructions
Sauté the vegetables: In a large pot, melt butter over medium heat. Add onion, carrots, and garlic. Cook for 5–7 minutes until softened and fragrant.
Add potatoes and broth: Stir in diced potatoes and pour in chicken broth. Bring to a boil, then reduce heat to medium-low and simmer for 10–12 minutes, until the potatoes are tender.
Add chicken: Stir in cooked chicken and simmer 3–4 minutes to blend flavors.
Thicken the soup: In a small bowl, whisk milk and flour until smooth. Slowly stir into the soup, letting it simmer another 5 minutes until slightly thickened.
Add cream cheese: Add softened cream cheese cubes and stir gently until completely melted and creamy. Avoid boiling to keep the texture smooth.
Season and serve: Add salt, pepper, and thyme to taste. Serve warm, topped with bacon, shredded cheese, or green onions if desired.
Notes
Make-Ahead: Prep veggies and chicken up to 2 days ahead for a quick weeknight dinner.
Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently over low heat, stirring often.
Freezer Tip: For best texture, freeze before adding cream cheese; stir it in fresh after reheating.
Variations: Try adding corn, spinach, or a pinch of cayenne pepper for a flavorful twist.
