This Chipotle Chicken Avocado Melt is a Panera-inspired sandwich you can make at home in under 15 minutes. With smoky chipotle mayo, creamy avocado, tender chicken, and a crisp golden crust, it’s an easy, flavor-packed recipe that’s perfect for lunch or dinner.
Ingredients
2 slices sourdough bread
1 cup cooked chicken (shredded or sliced; rotisserie works great)
½ avocado, sliced
2–3 Peppadew peppers, sliced (or substitute roasted red peppers)
Fresh cilantro, chopped
1 slice dairy-free or regular cheese (optional)
1 tablespoon butter or oil (for toasting)
For the Chipotle Mayo:
2 tablespoons mayonnaise (or dairy-free mayo)
1 chipotle pepper in adobo sauce, finely minced
1 teaspoon adobo sauce (from the can)
½ teaspoon lemon juice
1 small garlic clove, minced
Instructions
Make the chipotle mayo: In a small bowl, combine mayonnaise, minced chipotle pepper, adobo sauce, lemon juice, and garlic. Mix well and adjust spice level to taste.
Assemble the sandwich: Spread chipotle mayo generously on both slices of sourdough. Layer chicken, avocado, Peppadew peppers, cilantro, and cheese (if using).
Toast & melt: Heat a skillet over medium heat with butter or oil. Place the sandwich in the pan and press lightly with a spatula. Cook until golden brown and crispy, about 3–4 minutes per side, flipping once.
Serve: Slice in half and enjoy warm.
Notes
Adjust spice by using more or less chipotle.
For a vegetarian option, swap chicken for roasted veggies.
Best served fresh, but leftovers can be reheated in the oven to maintain crispiness.
