Description

This no-bake caramel apple éclair cake is the ultimate fall dessert—layers of cinnamon graham crackers, creamy vanilla pudding, spiced apples, and a glossy caramel topping. Perfect for Thanksgiving, potlucks, or any cozy gathering, it’s a make-ahead treat that always wows.


Ingredients

4 medium apples – peeled, cored, and diced (Granny Smith, Honeycrisp, or Gala work best)

2 tablespoons butter – for caramelizing the apples

¼ cup brown sugar – adds warm sweetness

1 teaspoon cinnamon – cozy spice for the apple layer

1 tablespoon flour (optional) – thickens the apple mixture

2 boxes (3.4 oz each) instant vanilla pudding mix

3 cups cold milk

1 cup sour cream – balances the sweetness

1 tub (8 oz) Cool Whip, thawed

2 boxes cinnamon graham crackers

1 container (16 oz) caramel apple dip, softened slightly for spreading


Instructions

  • In a skillet, melt butter over medium heat. Add apples, brown sugar, and cinnamon. Cook 6–8 minutes until tender and glossy. Stir in flour if using. Let cool completely.

  • In a large bowl, whisk pudding mix with cold milk until thickened. Stir in sour cream, then fold in Cool Whip.

  • In a 9×13-inch pan, layer graham crackers across the bottom.

  • Spread half of the apples over the crackers, then top with half of the pudding mixture.

  • Repeat with another layer of graham crackers, the remaining apples, and the rest of the pudding mixture.

  • Top with a final layer of graham crackers. Spread softened caramel apple dip evenly over the top.

 

  • Cover and refrigerate at least 8 hours (overnight is best). Slice into squares and serve chilled.

Notes

Best enjoyed within 2–3 days.

Not freezer-friendly.

Try chocolate grahams or homemade caramel for variations.

For a lighter version, swap sour cream with Greek yogurt.
