Description

Ingredients

For the Steaks:

4 thin-cut sirloin or ribeye steaks (about ½ inch thick)

1 tablespoon olive oil

Salt and freshly cracked black pepper

½ teaspoon smoked paprika (optional)

For the Garlic Cream Sauce:

2 tablespoons butter

4 garlic cloves, finely minced

¾ cup heavy cream

¼ cup grated Parmesan cheese

½ teaspoon Dijon mustard (optional)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Optional Add-Ons:

Crushed red pepper flakes

Sliced mushrooms

Splash of white wine

Dairy-free substitutes: coconut cream + vegan butter


Instructions

  • Sear the Steaks:
    Pat the steaks dry and season both sides with salt, pepper, and paprika. Heat olive oil in a large skillet over medium-high heat. Sear steaks for 1 minute per side, or until browned. Transfer to a plate and tent with foil.
  • Make the Sauce:
    In the same skillet, melt the butter over medium heat. Add garlic and sauté for 30 seconds, stirring constantly. Pour in the cream, scraping up browned bits. Stir in Parmesan and Dijon; simmer until thickened, 2–3 minutes.
  • Combine & Serve:
    Return steaks (and their juices) to the pan. Spoon sauce over the top and simmer 1 minute more. Garnish with parsley and serve immediately.

Notes

For a deeper flavor, deglaze the pan with a splash of white wine before adding the cream.

Substitute half-and-half for a lighter version or coconut cream for dairy-free.

Store leftovers in the fridge up to 3 days; reheat gently on low heat with a splash of cream.
