  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup chicken broth or pasta water
  • 8 oz fettuccine
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

  • Instructions

  • Bring a large pot of salted water to a boil and cook the pasta until al dente, according to package directions. Reserve 1/2 cup pasta water, then drain and set aside.
  • While the pasta cooks, pat the steak bites dry and season generously with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Sear the steak in two batches until deeply browned on all sides, about 1–2 minutes per side. Transfer to a plate and rest briefly.
  • Lower the heat to medium. In the same skillet, add the butter and let it melt. Add the minced garlic and sautĂ© until fragrant, about 30 seconds—watch closely to avoid browning.
  • Pour in the chicken broth or splash in pasta water to deglaze the pan, scraping up all the flavorful brown bits. Simmer for 1 minute.
  • Stir in the cream, bringing the sauce to a gentle simmer. Cook until it thickens slightly, about 3–5 minutes, then whisk in the Parmesan until smooth and glossy. If the sauce is too thick, loosen with a splash more broth or pasta water.
  • Return the steak bites to the pan and toss to coat in the sauce. Cook 1–2 minutes more so the flavors meld and the steak finishes cooking to your preferred doneness.
  • Combine the cooked pasta with the sauce and steak in the skillet, tossing to coat. If needed, add the reserved pasta water a little at a time to help the sauce cling to the noodles.
  • Season to taste with extra salt and pepper, sprinkle with red pepper flakes if using, and finish with chopped parsley for color.
