Ingredients
2 lbs mini Yukon gold potatoes, halved and scored
3 tbsp olive oil
2 tbsp fresh parsley, chopped (or 1 tbsp dried parsley)
1 tsp garlic powder
1 tsp salt (or to taste)
½ tsp black pepper
3 tbsp unsalted butter, melted
¾ cup finely grated parmesan cheese (Parmigiano Reggiano recommended)
Instructions
Preheat oven to 425°F (220°C).
Mix melted butter and parmesan cheese, then spread evenly in the bottom of a baking dish.
Halve the potatoes and score the flat side with a crisscross pattern.
Toss potatoes in olive oil, parsley, garlic powder, salt, and pepper until well coated.
Press potatoes cut-side down into the parmesan-butter mixture in the baking dish.
Bake for 25–30 minutes, until potatoes are tender and the crust is golden brown.
