2 lbs mini Yukon gold potatoes, halved and scored

3 tbsp olive oil

2 tbsp fresh parsley, chopped (or 1 tbsp dried parsley)

1 tsp garlic powder

1 tsp salt (or to taste)

½ tsp black pepper

3 tbsp unsalted butter, melted

¾ cup finely grated parmesan cheese (Parmigiano Reggiano recommended)


Instructions

  • Preheat oven to 425°F (220°C).

  • Mix melted butter and parmesan cheese, then spread evenly in the bottom of a baking dish.

  • Halve the potatoes and score the flat side with a crisscross pattern.

  • Toss potatoes in olive oil, parsley, garlic powder, salt, and pepper until well coated.

  • Press potatoes cut-side down into the parmesan-butter mixture in the baking dish.

  • Bake for 25–30 minutes, until potatoes are tender and the crust is golden brown.

 

  • Let rest 10 minutes before removing with a spatula to keep the crust intact. Serve hot.

Notes

For extra crispiness, use a metal baking pan instead of glass.

Add red pepper flakes or smoked paprika for a spicy twist.

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in oven or air fryer to restore crunch.
