8 oz crab meat (fresh or canned, drained well)

¼ cup mayonnaise

1 tbsp Dijon mustard

1 tsp Old Bay seasoning

1 tsp Worcestershire sauce

½ tsp garlic powder

1 tbsp lemon juice, freshly squeezed

1 large egg

Salt and pepper, to taste

¾ cup panko breadcrumbs

For Coating:

¼ cup all-purpose flour

¾ cup panko breadcrumbs

Oil for frying, or spray oil for baking

Optional (for Serving):

Fresh parsley or chives, chopped

Spicy mayo, cocktail sauce, or sweet chili sauce for dipping


Instructions

  1. Mix the Crab Filling:
    In a medium bowl, combine crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, Worcestershire sauce, garlic powder, and lemon juice. Fold gently to preserve crab chunks.

  2. Add the Binder:
    Mix in the egg, salt, pepper, and ¾ cup of panko breadcrumbs. Stir just until combined. If the mixture feels too soft, refrigerate for 20–30 minutes.

  3. Shape the Bites:
    Scoop about 1 tablespoon of mixture and roll into small balls. Place on a parchment-lined tray and chill for 15–20 minutes.

  4. Coat for Crunch:
    Roll each crab ball lightly in flour, then coat evenly with panko. Press gently so crumbs stick.

  5. Cook Your Way:

    • To Fry: Heat oil to 350°F (175°C). Fry crab crunchies for 3–4 minutes per side until golden brown. Drain on paper towels.

    • To Bake: Preheat oven to 400°F (200°C). Arrange bites on a lined baking sheet, spray with oil, and bake for 15–20 minutes, flipping halfway.

    • To Air Fry: Air fry at 375°F (190°C) for 8–10 minutes, shaking halfway through.
