  • 1 teaspoon sesame oil
  • 1 tablespoon sugar or honey
  • 1/4 cup beef broth or water
  • 1/2 teaspoon chili flakes or chili paste (optional)
  • 2 green onions, sliced
  • Sesame seeds for garnish
  • Salt and pepper to taste

  • Instructions

  • Prep the beef and the sauce: Freeze the beef for 15–20 minutes to make the slices extra thin, then slice against the grain. In a small bowl, whisk together soy sauce, oyster sauce, dark soy sauce (if using), hoisin (if using), sugar, sesame oil, and beef broth. If you like a bit more thickness, whisk in a teaspoon of cornstarch with a tablespoon of water and set aside.
  • Heat 1 tablespoon oil in a large skillet or wok over high heat. Quickly sear the beef in two batches for 1–2 minutes per side, until browned but still tender. Transfer to a plate and keep warm.
  • In the same pan, add the remaining oil and sautĂ© the garlic and ginger until fragrant, about 30 seconds.
  • Add the broccoli and a pinch of salt. Stir-fry until the broccoli is vibrant green and just tender, about 2–3 minutes.
  • Return the beef to the pan. Add the noodles and the prepared sauce (and the optional cornstarch slurry if you’ve prepared it). Toss everything together and cook for 1–2 minutes, until the sauce clings to the noodles and the beef is heated through.
  • Finish with green onions, a light sprinkle of sesame seeds, and a final drizzle of sesame oil. Taste and adjust with salt or a splash of soy if needed. Serve hot.
